Knead bread, harvest olives, and press olive oil 

Spend a full day living two of the Algarve’s oldest culinary traditions. At a local farmhouse, knead bread dough by hand and leave it to rise while walking to the olive grove to hand-pick ripe olives. Return to fire up a traditional wood oven, shape the bread, and fry sourdough fritters before placing the loaves in to bake. Sort the harvested olives, then sit down to a traditional açorda lunch while the bread finishes baking. In the afternoon, press the olives into fresh olive oil using manual, ancestral methods. The day ends at the table: warm bread dipped in just-pressed olive oil, paired with roasted chouriço — a true taste of rural Algarve heritage.

Itinerary

  • 7:00 — Meet at the local farmhouse
  • 7:30–8:30 — Knead the bread dough and leave it to rise
  • 9:00 — Walk to the olive grove to hand-pick olives
  • 10:00 — Light the traditional wood-fired oven
  • 10:30 — Shape and form the bread dough
  • 11:00 — Fry sourdough fritters (bolinhós)
  • 11:30 — Place the bread in the oven
  • 12:00 — Sort and select the harvested olives
  • 13:00 — Açorda lunch
  • 13:30 — Remove the fresh bread from the oven
  • 14:30 — Hand-press the olives into fresh olive oil
  • 15:00 — Taste warm bread and fresh olive oil with roasted chouriço
