Long a symbol of longevity in Asia because of their health-promoting properties, shiitake mushrooms have been used medicinally by the Chinese for more than 6,000 years. Like other mushrooms, these specialty mushrooms are as mysteriously unique as they are delicious. While often thought of as a vegetable and prepared like one, mushrooms are actually a fungus, a special type of living organism that has no roots, leaves, flowers, or seeds.They are rich in B vitamins, a good source of vitamin B2, and a good source of vitamin B6, niacin, choline, and folate. Additionally, they are concentrated in minerals, being an excellent source of selenium and copper, zinc and manganese.
Mushrooms are very porous, so if they are exposed to too much water, they will quickly absorb it and became soggy. Therefore, the best way to clean mushrooms without sacrificing their texture and taste is to clean them using minimal, if any, water. We recommend healthy sautéeing shiitake mushrooms; we feel that this method also gives shiitake mushrooms maximum flavor. They are traditionally added to miso soup, to give your vegetable stock an extra depth, or for a quick and easy Asian pasta dish, healthy sauté shiitake mushrooms with snap peas and tofu.

We were excited to find out about Farm Tours during a recent family trip, but initially flummoxed by scheduling – which a conversation with Estêvão promptly solved. Since it was at a destination midpoint he suggested the “Visit a Shiitake Mushroom Farm,” tour and even drove us himself – despite it being several hours, and through both a detour and a downpour! We’re still flabbergasted and grateful – and it was also great to get to learn more about the company/his background. At the farm Manuel’s demonstration of the inoculation process was fascinating – and the chance to try it ourselves – great fun! The alfredo lunch was splendid – as was the homemade wine, and while we’re sorry we didn’t get to meet his wife who is the fantastic chef – we’re thrilled to have enjoyed her cooking! Additionally Manuel’s workspace/barn area is populated by numerous custom contraptions – and kept in more pristine condition then most science labs. And as I’m late to write this, I can only imagine what he’s since been working on. Couldn’t recommend this more, many many thanks!

Ask yourself, “When will I ever again have an experience visiting a mushroom and a snail farm?” My family of four (6 and 8 year old) absolutely loved our truly unique and memorable Portugal Farm Experience with Estevao. He accomodated us by changing our requested date to avoid going on a rainy day. Estevao picked us up promptly @ 10 am and was a personal driver for the entire day. We visited two farms, a mushroom farm, and a snail farm, both unique trips in themselves. At the mushroom farm, we saw and participated in the entire process and learned how they grow mushrooms. We had an absolutely delicious home-cooked outdoor picnic featuring freshly picked mushrooms in a variety of Portuguese dishes. Then, we travelled to the snail farm, where we met with the local farmer, learned about the process of snail farming, handled the snails, and enoyed a home cooked Portuguese Snail stew. Afterwards, Estevao drove us back to Lisbon. Estevao has a warm, genuine personality, and has many interestesting stories to share, which made the trip all the more enjoyable. Highly recommended!

Nos buscou no hotel e durante o caminho conversamos sobre sua experiência de trabalho, sobre as quintas da região, sobre a produção local e respondeu todas as perguntas com muita atenção! A experiência com cogumelos e o Sr. Manoel foi muito especial, aprendemos sobre inoculação de shiitake, tivemos um delicioso almoço embaixo das árvores feito pela sua senhora e vinho feito por ele! Estevão tem muito conhecimento sobre o assunto, é educado e gentil com todos! Recomendo todas as experiências que fiz!

We had a wonderful day and a wonderful tour and a wonderful meal at the mushroom farm. Rodrigues drove us there and back, and provided us with a lot of information about Portugal, farming, tourism, and mushrooms. We got to learn about the farming techniques, to pick our own mushrooms, and then enjoyed a delicious picnic meal which featured mushrooms. We took some back to our apartment that evening and made a delicious stir-fry. My next trip to Portugal will definitely include another farm tour!

In Portugal in Lisbon, wanted something different to do out of the city. I was able to combine this tour with the snail farm tour for a full day out, and found the tours easily complimented each other well. This tour a refreshing break away from the urban craziness of Lisbon. It was so much fun and gave me a deeper understanding and appreciation for organic farming in Europe. Host Rodriguez is professional and passionate about sharing his love for the many treasures that can be found in Portugal’s countryside, particularly the farming community. The farmers were similarly delightful and very hospitable. My only regret was not having a bigger stomach for the incredibly delicious dishes and wine provided! This tour would also suit older children.
