6 Dory wines paired with 4 tapas

Forty-five minutes from Lisbon, in Torres Vedras, this 2-hour experience positions itself between the estate’s most accessible tastings and its premium 5-course dinner pairing. Four tapas — Thai codfish ceviche, cod tongues a la Bulhão Pato, aged beef Pica-pau in mustard sauce, and sweet bean pastry — are paired course by course with 6 Dory estate wines (2 Harvest, 2 Single Variety, 2 Reserva), guided by Inês or the team with full tasting notes and food pairing explanation. Duda Ferreira described “dishes prepared with skill and care with indescribable flavors” in “a modern and pleasant environment with a breathtaking view.” William Gama called it “a great surprise” with “wonderful food, service, wine and place.” Kevin Burk praised the Alvarinho, Reserve white (Chardonnay blend), and Viosinho specifically.

Itinerary

  • Arrival at the winery in Freiria, Torres Vedras. Welcome and introduction to the experience and the Dory wine range
  • Couvert — the meal opens with the bread and amuse-bouche service. First wines: 2 Dory Harvest (White and/or Red), presented with tasting notes and the terroir context of Torres Vedras
  • First tapa — Thai codfish ceviche. Paired with Single Variety White. The guide explains the acidity-to-citrus pairing logic and the grape variety
  • Second tapa — cod tongues a la Bulhão Pato. Paired with Single Variety Red. The guide explains how the garlic and olive oil profile of this traditional dish interacts with the wine’s tannin structure
  • Third tapa — aged beef Pica-pau in mustard sauce. Paired with Dory Reserva White or Red. The guide explains the reserve tier and why the savoury richness of the Pica-pau calls for an aged, structured wine
  • Fourth tapa — sweet bean pastry. Paired with Dory Reserva. The guide explains the sweet-savoury pairing and closes the experience with tasting notes on the premium wine tier
  • Open time and departure — guests explore the wine shop and purchase bottles. Total experience approximately 2 hours

Highlights

Six Wines, Four Tapas, Two Hours — The Mid-Tier Pairing at Its Best This is the experience that sits between the Gold tasting (16 wines, no food) and the Salty Food & Wine Pairing (5 courses, 6 wines, €124). It gives you the full 6-wine Dory range — all three tiers — alongside 4 tapas that cover the full spectrum from seafood to meat to pastry. Duda Ferreira described “dishes prepared with skill and care with indescribable flavors.” William Gama called it “a great surprise.” At €90 for 2 hours, this is the sweet spot for guests who want both wine education and food quality without the price of the premium tier.

Portuguese Classics Reinterpreted — Thai Codfish Ceviche to Pica-pau The menu is a creative interpretation of Portuguese culinary tradition. Thai codfish ceviche puts a contemporary spin on Portugal’s most iconic ingredient. Cod tongues a la Bulhão Pato is one of the most traditional recipes in Portuguese cooking — garlic, olive oil, clams, and coriander. Aged beef Pica-pau in mustard sauce is a Portuguese pub classic elevated to a wine-pairing context. Sweet bean pastry closes on a note of regional confeitaria. It is Portuguese food culture in four dishes.

The Pairing Logic — Why Each Dish Was Matched to Its Wine The guide does not simply pour wine alongside food. Each pairing is explained: why the acidity of the Single Variety White balances the ceviche’s citrus, why the Reserva White’s body holds up against the richness of the Pica-pau, why the sweet bean pastry calls for the premium tier. Kevin Burk specifically praised the “attentive, knowledgeable service” and highlighted individual wines. This is food and wine education at the level most guests associate with fine dining — delivered at a vineyard in Torres Vedras.

Duda Ferreira’s Verdict — “One of the Best Restaurants in the Lisbon Region” With a modern winery, breathtaking vineyard views, and dishes described as having “indescribable flavors,” this experience operates at the level of a premium restaurant — not a tourist activity. Duda Ferreira’s review is a direct comparison to the best the Lisbon region has to offer. William Gama said he “will be back for sure.” At €90 per person with 6 wines and 4 tapas, the value is clear.

The Right Tour for Couples, Small Groups, and Anyone Who Eats Well With a minimum of 2 and maximum of 40 participants, this experience works for intimate dinners, birthday celebrations, and corporate groups alike. The combination of a sophisticated menu, a full wine range, and a scenic setting makes it one of the most complete food and wine experiences available within 45 minutes of Lisbon — for guests who want quality without the full commitment of the premium 5-course format.

Very nice! Kevin Burk

There are three options and three separate locations to enjoy this beautiful winery and their wines: full service restaurant, by-the-glass tasting area, sample tasting bar. We enjoyed the by-the-glass area and had a few tapas to go with our very nice wines. Attentive, knowledgeable service in English. Very nice Alvarino, Reserve white (Chardonnay blend) and Viosinho
